Pre release Chardonnay 2019
The second single vineyard Chardonnay, from what was initially developed as one of Australasias largest organic vineyards. This fruit comes from a stunning vineyard on the Wairau, not far from the Tavern. Clone Mendoza was harvested - and carefully crushed, and started a wild ferment in French oak. Barrels started with a wild fermentation, followed by an inoculation to see them through ferment. Post ferment the wine was held on lees and went through a natural malolactic fermentation. Regular lees storing at controlled temperatures between 13 to 16°C.
