Noble & Sunday Lime Blossom & Chamomile Tea

This green tea infusion of Wu-Lu tea is infused with a complex lemony chamomile aroma. The lime tree blossoms, chamomile and a hint of ginger are layered with elderflowers, marigold and sunflower blossoms to create a unique and relaxing blend.

To get the perfect brew of green tea is simple, though often missed; getting the temperature and time just right. Many people find green tea too astringent because they are brewing their drink at 100˚c. Green tea is very delicate and needs cooler water. Brewing green tea at 80˚c brings out completely different flavours, yielding a sweeter and much smoother brew with the complex flavours not overpowered by tannins.

A fresh, beautiful golden-green liquor is just bursting with powerful mint notes which are both strong, refreshing & intense finish on your palate. Being caffeine free, this organic USA grown Peppermint is great for helping with aid with digestion while improving concentration. While peppermint is grown extensively in Egypt the best tasting peppermint comes from the Pacific Northwest of the United States where the summers are hot and dry.

All of our organic peppermint comes from Willamette Valley which cultivates 400 acres annually with minimal inputs thanks to best farming practices with regular crop rotation and intensive hand weeding. Harvested just before it begins to flower, when the oil content is highest. After cutting, the plant is allowed to field dry, then the stems are removed through a static sorting machine and then the mint is sorted into uniform leaf sizes also know as grades.

The Willamette Valley is particularly special as it has the highest flavour profile quality of peppermint oil in state of Oregon and arguably the world. It is exceptionally bright and distinct with a nice level of menthofuran (a potent component of mint oil)

Its botanical or Latin name is Mentha piperita (peppermint).

Noble & Sunday Ginger Limoncello

Our take on the classic lemon ginger tea: lemongrass and orange peels form the citrus base with layers of just ginger finished with cinnamon and cloves too for that gentle warming spice. The other herbs used in this blend continue to add complexity and aroma to this drink, with rosemary, lemon myrtle and blackberry leaves. The result is a warm, aromatic, smooth and satisfyingly full-bodied drink with a slight sweetness and lingering aftertaste. Because this is a herbal infusion, over brewing this tea will not bring out astringency or puckery taste; instead, you will get an intensifying of flavours and can experiment to your taste.
